This is a great recipe. As a suggestion, I would grate or food process just one piece of lemon grass then squeeze out the liquid through a cheesecloth or paper towel into the sauce. I do this on a regular basis with recipes that call for lemongrass and I'm able to use just 1/4 of what the recipe calls for with the exact same flavor (I have blind taste tested both methods - bruising stalks vs my above method - with same results). - Nedley Meyers
